Bran Muffin Recipe


This recipe, from my mom, is called "IBM Bran Muffins" in our house. She acquired the recipe while working at IBM before I was born. They have been a staple in my family for years, and for some reason I've always LOVED a good bran muffin. I cannot count on 1 hand how many times I have made these throughout my pregnancy. Best of all, these freeze and thaw really well! I make a batch and then eat them for 1-2 weeks. 

IBM BRAN MUFFINS

Ingredients: 
  • 3 3/4 c. Bran Cereal {with or without raisins, your choice}
  • 2 c. milk
  • 1/2 c. vegetable oil
  • 1/3 c. molasses
  • 2 eggs, slightly beaten
  • 1 3/4 c. flour
  • 2 t baking powder
  • 1/2 t baking soda
  • 1/2 t salt 
  • 1/2 c. sugar

Directions: 
  1. In large bowl, soak bran cereal with milk for 20 mins.
  2. Preheat oven to 375*
  3. Add to cereal mixing with a spoon in between each ingredient in the following order: 1) vegetable oil; 2) molasses; 3) eggs 
  4. Sift together flour, baking powder, baking soda and salt.
  5. Mix dry ingredient with bran mixture til moist.
  6. Add 1/2 c. sugar, stir in. 
  7. Line muffin tins with paper or silicone cups, fill 3/4 full.
  8. Bake at 375* for 18-20 mins or until toothpick comes out clean. {Bake only 10 mins for mini muffins.}
  9. Allow to cool. 
Very easy and delicious. Enjoy! 

As for the little lady...she's still hanging out in the comfy womb.
