Whole Wheat Oatmeal Pancakes

The other day I set out to find a yummy but wholesome pancake recipe to make for Little Lady. Of course I ended up eating a decent amount too {as did the dog}. I was inspired by this recipe from Of course, I {modified} it the recipe to work with the ingredient and kitchen tools that I had in the kitchen. 

Whole-Wheat Oatmeal Pancake Recipe
Makes 8-10 medium pancakes


1/2 c whole-wheat flour
1/2 c old fashioned oats
1 TBS maple syrup
1 tsp baking powder 
1/2 tsp baking soda 
1/2 tsp salt 
3/4 c whole milk
1 tsp vanilla extract 
2 tablespoon applesauce
1 egg

  1. Place oats and milk in food processor or large cup and soak for 5 minutes. If you're using quick cooking oats then you can skip this step.
  2. Add remaining ingredients and blend until smooth. 
  3. Heat a pan or griddle that is lightly oiled over medium high heat. {I use ghee, also known as clarified butter.} Add about 1/4 cup of batter and cook. 
  4. Serve and enjoy!

Lately I have cooked the entire batch and placed them in the fridge for reheating. I bet you could freeze them as well. They are a hit with Little Lady! Perfect for a quick and easy breakfast.
